Yes, our newest residents are doing their bit and laying eggs hand over fist and wing over claw – the current record to beat is Saturday’s, with a grand total of 26 out of a possible 30.
Of course, with all those eggs we’ve had to put our thinking chef-caps on and come up with eggy recipes. So far we’ve had a couple of sponge cakes, omelettes, frittata, bacon and egg pie, fish pie (with chopped-up boiled eggs in it) as well as the usual poached, fried and scrambled methods.
I’ve also managed to secure two permanent weekly orders for a dozen eggs each for some workmates.
But…that still leaves quite a few eggs left over.

Gypsy toast – aka eggy bread
Pavlova – and then add the left over yolks to your mash to make it lovely & rich
Kedgeree – garnish with boiled eggs
and finally, a Sunday morning favourite with us as kids ~
Breakfast Buttermilk Pancakes
Ingredients
225 g (8 oz) flour
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp salt
2 eggs
3/4 pt buttermilk
4 tbsp melted butter butter or oil for frying
Method
1. Sift the dry ingredients into a large bowl.
2. Whisk the eggs until they are light and fluffy.
3. Stir the buttermilk into the eggs.
4. Fold this into the dry ingredients and mix until smooth.
5. Add the melted butter and stir well.
6. Heat your pancake pan until it is very hot, Add a little fat and when it has melted, pour off any excess.
7. Cook the pancakes (about the size of the outside circumference of a new roll of sticky tape) until golden on each side.
8. Keep pancakes warm in a low oven while you cook the rest of the mixture.
These pancakes are not thin crepe-y type pancakes – thicker and spongy. Serve them warm with extra knob of butter butter or, my personal fave some maple syrup … and maybe some bacon – have you considered keeping pigs??

I would so order if I thought they would make it here safely. I’m guessing it will be me making it safely there before that will ever happen. Too bad you can’t freeze them. I am so jealous of your chickens. I really want some!
